I also prefer my fried eggs to be moisture-less. The wetness squicks me out.
It took a long time to get used to things like hot noodles or hot rice with a runny egg on top. I do enjoy that at least, but 70% of the time I overcook my yolk

I can’t have brown on my eggs. I will cook them low and slow until the are cooked through but I have to peel off any of that gross brown hard skin that is on yours.

This is the only way my kid will eat eggs, break those up and brown till crunchy on all sides. No white and pretty much no yellow allowed. Just brown crunchy things.

My dad used to cooks his eggs like this (not sure if mom let’s him do it anymore), he just adds salt and pepper afterwards. I’ve had them in a sandwich once, and it wasn’t that bad honestly, it’s just not the way I like them.
There was a Chinese dish with noodles that was topped with a crispy fried egg on top, don’t remember the name. Dad used to ask for the egg to be super extra crispy.
